Super Food Coconut “Rice” Pudding with Raspberry Puree

I was going to use fresh raspberries, but I had them on the counter and my oldest ate all of them in five minutes! So frozen raspberries it was πŸ™‚

With my first two boys all I wanted was protein and more protein. I’m talking Mexican burrito bowls all day every day! With this third boy I want sweets all the time, I don’t have a big sweet tooth so its been so weird to have such a craving. I can be found weekly in the candy aisle, never buying it but just contemplating if I want any of it ha! I think part of it is dehydration so I keep a lot of water on me, but recipes that help curve that sweet craving are anything that’s sweet but also has some filling long lasting carbs (aka quinoa and steel cut oats).

Warm, Filling & just enough sweetness!

Steel cut oats have double the protein of oatmeal and quinoa adds to the protein in this dish as well. I actually ate this for dinner because I love having something warm in theses Massachusetts winters & it was actually so filling and my boys ate it too! Win, win as I say πŸ™‚ **I stayed full all night too!

– 1/8 cup steel cut oat
– 1/8 cup quinoa
– 1/4 cup rice
– 1 tblsp. Chia seeds
– 5.4oz can of coconut cream
– (optional) 2 tblsp of your favorite sweetener
– (optional) sprinkle himlayan salt (or your fav.)
– 3/4 cup + extra for puree, dairy alternative
– 1-1/4 cup of raspberries
– 3-4 medjool dates
– (optional) toppings: chopped dates, fresh fruit, coconut flakes, bee pollen, hemp seeds, exc.


  1. In a medium saucepan bring steel cut oats and 1/3 cup of water to boil, reduce to simmer for 5 minutes. Making sure the water never runs out in the saucepan.
  2. Add quinoa and rice to the saucepan along with 3/4 cup of dairy alternative milk (I used coconut milk). Bring to boil, then reduce to simmer for 15-20 mins, until 80% of the liquid is absorbed. Refer to the photo below of the grains in the pot.
  3. While the grains cook, make the raspberry puree. Add raspberries and dates to a blender with dairy alternative milk if needed to blend. Add as much or as little “milk” to make a puree with your desired consistency.
  4. When the saucepan with the grains is ready, stir in the can of coconut cream and chia seeds, simmer for 5 mins or until a pudding consistency is achieved.
  5. optional: if you want a sweet coconut rice pudding, add 2 tablespoons of your favorite sweetener. Example, maple syrup, agave, exc. & a dash of salt
  6. Pour pudding into a bowl and cover with as much raspberry puree as you’d like and toppings.
  7. Highly recommend chopped dates and some fresh fruit as a topping. Along with superfoods such as hemp seeds and bee pollen.

Get creative with the topping! Its a great way to “sneak” in a lot of superfoods!
